Vineyard Notes
Sourced from the Vista Verde Vineyard in San Benito County, Tocai Friulano and Arneis are planted in Cropley, San Benito/Series (Clay Loam) soils. Planted on a small hillside with vines that are 20 + yrs old.
Production Notes
Tocai Friulano and Arneis were pressed off skins and cold settled before going into the concrete egg. Once in egg, it was allowed to start fermenting naturally. After completing fermentation it was racked again and put back to age in the egg for 7 months. Not fined.
